I know that there are men and women in Poland for whom dinner is incomplete without a decent piece of meat: a cutlet, roasted thigh or pork shank. There are also more and more meat dishes in China, but the selection of green vegetables is truly delightful. The Chinese who live in Europe or the United States lack such stalls and shops. There are usually a dozen or so varieties of leafy vegetables available in each Chinese city. Some are sweet, some are bitter, some are very bitter. Some are eaten fried with garlic and soy sauce, others are boiled in broth, and still others are perfect for dumplings. In China, we can buy various varieties of cabbage everywhere, Chinese cabbage, napa, chicory, spinach, pak-choi, pea shoots, gai lan, celery leaves, etc.
